
Friday Positivity - Yummy Drink Recipes For Your First Post-Quarantine BBQ
We are now experiencing, at least in Minnesota, a phased reopening of restaurants and bars.
While it's still essential to practice social distancing, this seemingly small change opens the door to summer possibilities I had all but given up on. Driving through the streets near our downtown office in Minneapolis, one can see patios filling up and people gathering in small groups. What once felt so far away is starting to happen before our eyes.
If the nice weather and steps toward normalcy haven't been enough to boost your positivity levels, dont worry. I've still got something fun for you this week.

Pineapple and Siracha Margarita Cocktail
Ingredients
- 2 ounces of tequila
- 2 ounces of cubed pineapple
- 2 ounces of pineapple juice
- 1 ounce of lime juice
- 1/2 ounce of agave nectar or to taste
- Lava salt for rimming the glass
- A couple of dashes of Sriracha
- 1/2 cup of ice
Garnish: Pineapple slice
Instructions
- Add tequila, cubed pineapple, pineapple juice, lime juice, agave, Sriracha and ice to a cocktail shaker
- Rim serving glass with black lava salt
- Shake then pour into serving glass
Serves: 1

Coco Tropico Rum Cocktail
Ingredients
- 5 ounces white rum
- 1 ounce coconut water
- ½ ounce Monin desert pear syrup
- ½ ounce Monin coconut syrup
- 1 ounce lime juice
- Lime, mint and umbrella for garnish
Instructions
- Cut the coconut in half while saving the coconut water for the cocktail
- Combine all ingredients in a cocktail shaker with ice
- Shake hard to chill and combine ingredients
- Strain over fresh ice into rocks glass
- Garnish
